At Soyo Matcha, we are proud to offer you an exceptional matcha sourced from the Shaanxi province in China. This region is renowned for its majestic landscapes and rich agricultural traditions, providing a unique terroir that gives our matcha its unparalleled quality and flavor.
Shaanxi’s fertile soils and ideal climate make it home to some of the finest green teas in the world. It is in these carefully maintained plantations that our matcha is grown and hand-harvested by passionate artisans who uphold ancient methods of tea cultivation and processing.
We chose Shaanxi for the exceptional quality of its tea leaves and the unique expertise of its producers. Each leaf is meticulously selected to ensure optimal purity and nutrient richness. The result is a vibrant matcha with delicate notes and a silky texture, distinguished by its depth of flavor and perfect balance.

Does the color of matcha change depending on the flavor?
Our Soyo Matcha Ceremonial boasts a vibrant, bright green color—an undeniable sign of its exceptional quality.
For our deliciously flavored matcha varieties, such as strawberry, mango, or coconut, the color may differ slightly. This is because, in these blends, matcha is combined with dried, ground fruits, all sourced from organic farming. While the color may appear slightly different, the quality remains at the highest level, ensuring an unparalleled taste and nutritional experience.
MANUFACTURING PROCESS
The production process of matcha is a traditional art that involves several precise steps to ensure a high-quality product. Here’s how matcha is made:
- Cultivation and Shading of Tea Plants
Shading: About three to four weeks before harvest, the tea plants are covered with mats or nets to reduce direct sunlight. This technique, called "shading," increases chlorophyll and amino acid production, giving matcha its vibrant green color and characteristic umami flavor. - Harvesting the Leaves
Selection: The tea leaves are handpicked to ensure only the youngest and most tender leaves are used. This selective harvesting is crucial for producing premium-quality matcha. - Steaming
Preserving Color and Nutrients: Immediately after harvesting, the leaves are steamed for about 15 to 20 seconds. This step prevents oxidation, preserves the bright green color, and locks in nutrients. - Drying
Air Drying: After steaming, the leaves are slowly air-dried to reduce their moisture content while preserving their color and flavor. - Destemming and Sorting
Removing Stems and Veins: The dried leaves, known as "tencha," are stripped of stems and veins. This process is essential to achieve a smooth texture and mild flavor. - Grinding
Stone Milling: The tencha leaves are then ground into a fine powder using traditional stone mills. This slow grinding process produces the ultra-fine powder that characterizes high-quality matcha. - Packaging
Airtight Packaging: The freshly ground matcha is immediately sealed in airtight containers to protect its freshness, vibrant color, and delicate aroma from oxidation. - Quality Control
Rigorous Testing: Each batch undergoes strict quality checks to ensure it meets high standards in terms of color, taste, and texture. Batches that do not meet these standards are rejected. - Organic Certification (if applicable)
Compliance with Organic Standards: If the matcha is certified organic, the cultivation and production process must adhere to organic certification standards, ensuring the absence of pesticides and chemical fertilizers. - Distribution
Shipping: The matcha is then distributed to retailers or shipped directly to consumers, ready to be used for beverages and various recipes.
This meticulous and traditional process ensures that matcha retains all its nutritional qualities and health benefits while offering a unique and refined taste experience.
